Are you looking for a simple and delicious winter meal? Then try this super easy soup.
All you do is roast some pumpkin and garlic in olive oil until cooked. Once cooked place pumpkin and garlic in a slow cooker with a litre of good quality liquid stock, add 2 onions and a some brown lentils and cook on high for 3 hours.
If you are a non dairy person add some coconut milk towards the end or you can add some cream if you prefer. Place in a blender for a smoother soup or leave as is for a more stew like consistency. Serve with some bread and then you will have a complete protein meal.
